You've explained why people should listen to what you're saying and that you know what you're talking about very well, but then you might be placing doubts in their mind when they mistake your lack of confidence in front of the camera as lack of confidence with the material. If you aren't comfortable with even that, you could have a front slung weapon and just have both hands on it while you talk as it gives them stationary anchor points and you don't have to talk with your hands if you're not comfortable with it.

Instead of crossing your arms, feel free to gesture naturally while your talk, or hold the device you are explaining in your hand. Square your chest and stance to the camera and look into the lens when you talk. Also don't stand with your arms crossed and bladed to the camera. Maintain eye contact with the camera unless it is relevant to look somewhere else such as a device you are demonstrating. Also your body language shows you're not confident, and while it is obvious you are just not as comfortable in front of a camera as you'd like to be and completely confident in what you're talking about, I think you will develop a more confident vibe that shows you know what you're talking about with a dominant posture and eye contact.
